Sequences of proteinases for the conversion of proteins to highly modified hydrolysates of small peptides with either very low bitterness and/or strong taste are available. These enzymes have been carefully selected to work together after extensive studies of their action of target proteins.
General proteinases also should be supported by uniquely potent exo-peptidases acting to tidy up flavour characteristics and remove bitterness.
